MORE ABOUT THE EVENT: Join RASBJ Eats for an introduction to Fuzhou and wider Fujian cuisine. Shaped by Fujian's coast, mountains, preserved ingredients, and maritime connections, the region's food is known for seafood, carefully prepared soups, fine knife work, and a balance of freshness, sweetness, and gentle acidity. The menu combines Fuzhou specialities with selected dishes from elsewhere in Fujian, offering a view of both formal banquet cooking and everyday local foodways.

This dinner will take place at Juchunyuan (聚春园) in the Beijing Fuzhou Hotel (北京福州宾馆), near Xinjiekou. The restaurant draws on the heritage of Juchunyuan, the historic Fuzhou restaurant whose lineage dates to 1865 and which is particularly associated with fotiaoqiang (佛跳墙, "Buddha Jumps Over the Wall").*

Prepared by the restaurant's chef as an introduction to Fuzhou-style cooking, the menu includes Fuzhou and wider Fujian specialities such as 翡翠荔枝肉拼五香卷 (lychee pork with five-spice roll), 海蛎炣豆腐 (braised tofu with oysters), 传统南煎肝 (traditional Fuzhou-style pan-fried liver), 鱼丸肉燕汤 (fish ball and meat-swallow dumpling soup), and 福州锅边配虾酥 (Fuzhou rice-sheet soup with crisp prawn fritters).

*Note on the Dish "Buddha Jumps over the Wall: Because an individual serving of 佛跳墙 (fotiaoqiang, "Buddha Jumps Over the Wall") costs RMB 198, it is not included in the dinner price. Participants who would like to try it are welcome to order and pay for an individual serving at the beginning of the meal.

DIETARY NOTES:

This event is open to all and warmly welcomes guests from every background; however, in order to preserve culinary authenticity, we are unable to accommodate menu changes for specific dietary requirements. We can ask the restaurant to provide an ingredient list for particular dishes on request.

REFUND POLICY: Tickets are non-transferable and non-refundable. However, if RASBJ cancels the event, all registrants will be refunded in full.
